Hungary matured sausage
(Amended) product specification in the national quality scheme of High Quality Food (KMÉ) for matured sausage
The product specification in the High Quality Food (KMÉ) national quality scheme for matured sausage, previously notified under number 2021/487/HU, has been amended. Under the heading “Optional elements” in
the Specific Certification Requirements, more precisely under sub-heading “II. Sustainability”, new points have been formulated for sustainability, significantly expanding the range of optional elements.
In addition, following the notified amendment to the Codex Alimentarius Hungaricus in its regulation on meat products, the provisions concerning the water activity value have been changed, now there is an upper limit for the additives that may be used, and the parameters that need to be examined in the laboratory as part of self-monitoring have been amended.
